What is Gluten?

Well, gluten is a protein found in wheat. Now, the problem with gluten is that many people cant digest it very well. Symptoms such as gas, bloating and cramps arise. Over the years, more and more gluten has been added to wheat and the consumption of gluten has dramatically increased. Below is a list of gluten products and gluten free products.

Gluten Products – wheat, barley, rye, kamut, spelt, couscous, durum semolina

Gluten Free Products – amaranth, rice, buckwheat (kasha), corn, millet, quinoa, tapioca, teff, sorghum.

If you feel you are sensitive to gluten and experience any of the symptoms or feel tired and sluggish after eating products with gluten, then you may want to give these products a rest for several weeks. This will allow your gut (stomach) and intestines to heal. Once this healing takes place, you then can introduce these gluten products very slowly.

If you cannot stay away from gluten, then try to buy “sprouted” instead. These products will still contain gluten, however the “sprouting” will allow your body to digest the protein more easily. Sprouted foods contain alot more energy, more enzymes, is a complete protein, has a higher fiber content and has increased amounts of vitamins A, B, C, E, K.

Also, when purchasing rice, stick to buying long-grain brown rice. This is your best choice because it contains more nutrients and it is also gluten free.
